This course is a 13-day comprehensive hands-on training program that is based on CCA, Manila’s focus in developing cooking skills, infusing knowledge, and transforming the learner’s attitude through the right concepts and techniques, proper palate training, speed in working, and teamwork. Each class is designed to teach specific skills, which gradually becomes more complex as the program progresses. Participants of this program will learn from CCA’s exceptional Chef Instructors. The most exciting part is learning to cook a wide array of cuisines which includes Asian, Western, and Filipino cuisines. The sessions conclude with a group tasting and a critique of the day’s work by the Chef Instructor so that the participants continue to develop their palates, identify successes, and learn from their experiences. Admission Requirements - Freshmen: Pre-admission Requirements: 1, Kitchen Discovery Class - The program works in two ways. First, it is a means for you to gauge your interest in kitchen work, and in pursuing culinary or pastry arts as a profession. On the other hand, it is also a means for CCA, Manila to assess your psychomotor skill in the kitchen. More importantly, it is a basis for evaluating your general work attitude – your ability to work in a team, ability to follow instructions, and ability to maintain order in the kitchen brigade. 2. Written Exam (for Senior High graduates) 3. Medical Exam Requirements: 1. PSA Birth Certificate 2. 3 pieces of 2×2 photo and 3 pieces of 1×1 photo all in white background 3. Form 137 (for senior high graduates) 4. Transcript of records (for college graduate/college level applicants) 5. Certificate of Good Moral 6. 2 letters of recommendation preferably from the Registrar’s Office, Guidance Counselor or previous teacher
